Scrumptious Saturday!!!!

Well in the new trend of fellow bloggers, I am going to start posting a recipe I like once a week. Everyone has cute names for theirs and do them on various days of the week so I think I will do mine on Saturday!! And the first recipe that I am posting was really scrumptious hence the name of today's blog!

I am always looking for new recipes and ideas for cooking some of the staples we have in the house. We like alot of pork chops, hamburger meat and various other types of meats. This week I made pork chops in the oven and was having a hard time finding a new way to cook the chops. The following is what I came up with!!

Baked Pork Chops Garrett Style!
8 pork chops (we used a package of assorted chops so different sizes were in the pkg)
Season salt (or whatever spices and seasonings u like...we used a garlic, onion combo by McCormicks)
3 onions (I ended up using 2 large sweet vidalia)
1/2 cup of water (the recipe called for 1/4 but with the size of my chops 1/2 worked better)

Preheat oven to 400.....Season the chops on both sides, place in glass baking dish or dishes (make sure they are not overlapping so they cook evenly) and add water. Cut the onions into slices and place on top of the chops (we pulled the rings apart but either way works). Cover the dish with aluminum foil and place in oven. Cook at 400 for 1hr and then turn down to 300degrees and cook for 30 minutes. The onions will soak up the flavoring of the pork chops and should melt in your mouth.

All I can say is YUMMMMY!!! The pork chops fell apart when I tried to pick them up out of the pan. The onions were still sweet plus with the seasoning they turned out really awesome. It was a hit with the family...If you dont like onions, you wont like this one possibly but even my little 4yr old DEVOURED 2 of them!!!!

We served fresh veggies (cucumber slices and tomatoes) and wild grain rice with ours and the whole meal was awesome...It was easy prep and easy cleanup!! Perfect thing to put together maybe the night before that way all u need to do is throw it in the oven when u get home from work!

Fun week!!

See I told you I would be back!!! This week has been the week from HELL!! The week started out with Alex coming home sick from church on Sunday...he stayed sick until Wednesday morning with a fever and congestion. Then he passed it on to Mommy! Oh JOY! Not really!!! And of course my hubby was out of town like the last time I got really sick. Wednesday I spent the day on the couch barely able to keep my eyes open. Thank u God for Disney Channel and Nick Jr because Alex pretty much spent the day watching his show or coloring until his bubba and kiki (Austan and Heather) got home. I am still dealing with some of the stuff...The dr said today (that story in a second) that Alex and I probably had the flu so JOY for me!!

The story..The week ended today with getting a call from the middle school Austan goes to saying he had something happen in gym and he hit his head on the wood floor kinda hard...Went to the Dr office first then got sent to the a cat scan and came back clear (Praise God) so we came home...Doing better tonight but keep him in ur prayers.

Getting ready for Thanksgiving and Christmas in a few weeks...spending both in Austin with my sister and brother in law. Cant wait!! So how has your week been???

Let's Try Again!!!

Well I keep saying I am going to get back into blogging but just do not seem to find time. I can find time to do anything else but when it comes to sitting down to blog, NOTHING happens!! So even though today is the worst possible day for me to start back, I am going to bite the bullet and JUST DO IT!!

The past few months have been a crazy whirlwind of activity. Since I blogged last I went home to Arkansas for my 20yr high school reunion and visit with family and friends. I had an AWESOME time!! I got to see SOOO many of my friends that I did not realize I really missed until seeing them again after YEARS!! I even got surprised by a friend I have not seen since before he went to Iraq when my friend Leann picked Scott and I up at our hotel! My mom was awesome and kept the kiddos some and so did my sister Christy. We had her son (my newphew Braeden) for a couple of weeks before that so the kids had a great time. I ended up having some time to myself after we got back because Scott took all the kids to see his mom and their other grandmother in Oklahoma for 4days. Nice to enjoy the peace and quiet!

School started back so the usual prep for that was crazy but now we have Heather(14) in high school (9th grade), Austan (11) is now in middle school (6th grade) and Alex just turned 4 on October 20th....We happened to get lucky and Alex is also in preschool now 3 days a week for 3 hrs a day in the morning through the same high school that Heather attends and he LOVES school. I will maybe post pics soon of all 3 of them!! I have tons on Facebook so if you are a fellow Facebooker, check them out. About to add TONS more from the summer and fall!!

I changed areas at church in regards to my volunteering. I still love my church and am so thankful to God that he brought Scott and I to Houston and Community of Faith (COF for future reference). We are doing a marriage series now and we went to a parenting class last night and Scott won us gift cards for a night out for just the two of us! GO HUNNY!!!

There are sooo many other things going on but I will have to go into those at another time!! I am getting the house ready for Alex's birthday party tomorrow. We decided to plan it on Halloween for fun since it is so close to that date and originally Alex was due on Halloween! We have a good guest list coming and it will be the 1st REAL party he has had where his little friends from school and church are able to come!! We have some very special people coming too so he should be excited!!

Hey everybody!!!

I am finally back to the blogger world!!! I dont know how many people read this but I am sure you have probably thought I fell off the face of the earth!! Just been a crazy busy spring and now summer is upon us!! Had so many things going on with kids and Scott in school and the usual running around with Alex and babysitting and the list goes on!!!

Going to try to make more of an effort to keep up with the blog because it is a fun way to keep up with everyone and look back on later to see how times flies by!!
The kids are out on summer break...Driving me crazy but what is new!!! Scott is still plugging away at school but has a new position at work that keeps him traveling just about every week! That has been hard to get used to but it keeps me able to be a stay at home mom like I have always wanted to be!

I got over my health issues from January but am having some issues with sinus/headache and not sure what is causing it but keep me in your prayers for answers!!

I will be posting more pics that we have taken over the last few months as I get back into keeping up with the blog!!

SIDE NOTE!!! During my absence, my 3yr old is completely potty trained!!! NO MORE PULL UPS!!! WOOHOO!!!

Hi all....Just thought I would post a slideshow of pics from our trip to Austin this past weekend.....We went and had lunch with my sister and brother in law who were in town on business. We have not seen anyone from home since last March so this cured my homesickness for now until I go home in July for my 20yr High School reunion...I FEEL OLD !!! But Facebook has been awesome in reconnecting with old friends from school and old jobs and people I have lost touch with over the years. I hope to get back to blogging soon. We have had tons of medical drama in our house this past month which I will update on soon!! Love and miss you all....Enjoy our little adventure!!!

Hey everyone!!! Happy New Year!!! I hope everyone had an awesome holiday season! One of my resolutions was to update the blog more but I have failed at that one!!! Oh Well !!! No time like the present. We had a great Christmas here in Katy but missed our families in OK and AR greatly!!! The kids racked up as usual and Alex really got into Christmas this year!! He loved that Santa ate the cookies and drank the milk we left and that he left him really cool presents!!! The kids really enjoyed it just being us at home instead of traveling so that will be our new tradition until the kids are older and have their own families!!! Austan just turned 11 on Jan 6 and my wonderful hunny is having a bday this week too!! Alex thinks everyday is his bday but at 3yrs old I probably did too!! I will have some pics uploaded hopefully soon!! I am trying to do a thing I saw on another blog I read about taking pictures everyday of the year to capture special moments no matter the importance...I have done ok with that one but it is still early!!!
